I tried something similar: I used vinyl as a mask for etching. It worked
(I even used this method for a QSOP-chip breakout board), but the
quality was limited. The thickness of the traces was varying (+/- 0.3mm,
maybe more) and I had to do a lot of repairing work with a precision
knife. You might get better results if you only use curves instead of
straight lines with quick turns, but as it's an accuracy problem I think
it's unavoidable.

PS: As someone mentioned before: If you want to do that, get an other
knife. Also make some photos of the results, I'd love to see them.
